Sodium Alginate is a natural polysaccharide extracted from brown seaweed, has numerous functionalities in food industry, such as thickening agent, stabilizer, emulsifier, texture improver,anti-retrogradation of starch and gel agent, due to its special chemical construction and excellent properties. Alginate can be widely applied as a natural additive in various kinds of food, such as wheat flour, noodles, frozen flour products, bakery, etc.
Function:
1. Use note: weak role in the acid solution, should not be commonly used in acidic larger
fruit juice and food.
2. Use scope and usage:
(1) the hygienic standards of using food additives in China (GB 2760-1996) regulation:
according to production needs to be used in all kinds of food in moderation.
(2) the American FDA regulations (1989) : use and set limit to, spices and seasoning
(besides the spices used to fill olive), 1%; Candy, candied fruit and cake icing sugar, 6.0%;
Gelatin and pudding, 4.0%; Canned, 10.0%; The processing of fruit and fruit juice, 2.0%;
Other foods, according to the actual process needs no more than 1.0%.
