DL malic acid is a mixture of D-malic acid and L-malic acid.
DL malic acid, also known as DL-hydroxysuccinic acid, is a chemical with a molecular weight of 134.09. Because there is an asymmetric carbon atom in the molecule, there are two stereoisomers: left-handed (L-malic acid) and right-handed (D-malic acid). In nature, malic acid exists in three forms, namely D-malic acid, L-malic acid and DL-malic acid. DL malic acid has strong hygroscopic properties, soluble in water, ethanol, and has a special pleasant sour taste. It is widely used in the food and pharmaceutical industry, as a food additive, mainly acts as a sour agent, color preservation agent, preservative and emulsifying stabilizer of egg yolk.
In addition, DL malic acid is also considered to be an ideal food additive with low calories, and when shared with 20% citric acid, it gives a strong natural fruit flavor.
