calcium lactate is a natural calcium l-lactate with high solubility. It is formed by the reaction of lactic acid and calcium carbonate. It is a kind of high-quality synthetic calcium lactate.

Soluble in water and practically insoluble in ethanol.
10% Calcium lactate solution at room temperature will not crystallize.
Calcium lactate is very soluble in hot water, and the aqueous solution is a colorless, odorless and transparent liquid.
It contains About 14% calcium. It stabilizes and improves the texture of canned fruits and vegetables by converting unstable pectin into insoluble calcium pectate.Therefore, it prevents structural collapse during cooking. It is used in angel food cakes, whipped toppings and meringues to increase the stretchability of the protein, which in turn increases foam volume. It is also used in calcium-fortified foods such as baby food and to improve the properties of milk powder.
