Food grade nuclease is a 5 '-phosphodiesterase preparation made by fermentation of penicillium citricola, advanced extraction technology, ultrafiltration concentration, drying and refining. Nucleases hydrolyze nucleic acids into 5 '-nucleotides, where 5' -GMP is a natural flavor enhancer, and 5 '-AMP can be converted to 5' -IMP with the same effect under the action of deaminase.
