[Production process] Egg white was used as raw material, adsorbed with weakly acidic cation exchange resin 732 at pH6.5, eluted with ammonium sulfate, and freeze-dried after dialysis.
[Product introduction] lysozyme, also known as muramidase or n-acetylmuramide glycanohydrlase, is a kind of alkaline enzyme that can hydrolyze mucoglycans in bacteria. By breaking the β-1, 4-glucoside bond between N-acetylmuramic acid and n-Z-acylglucosamine in the cell wall, the insoluble mucopolysaccharide of the cell wall is decomposed into soluble glyopeptides, resulting in the escape of the broken cell wall contents and the dissolution of bacteria. Lysozyme can also be associated with negatively charged poison.
