Trehalose, also known as trehalose or mushroom sugar, is a non reducing disaccharide composed of two glucose molecules with the molecular formula C12H22O11. The structural formula of trehalose is α- D-glucopyranosyl α- D-glucopyranoside, often present as a dihydrate, has the molecular formula C12H22O11 · 2H2O.
Trehalose is a typical stress metabolite that can form a unique protective film on the surface of cells under harsh environmental conditions such as high temperature, cold, high osmotic pressure, and dry dehydration, effectively protecting the molecular structure of living organisms from damage, thereby maintaining their life processes and biological characteristics.
When cells are dehydrated, sugar is believed to form a gel phase, which can effectively fix organelle in place to prevent the destruction of organelle. Then, rehydration can restore normal cell activity without causing severe and fatal damage after the usual dehydration/rehydration cycle.
Trehalose has an additional advantage, which is that it is an antioxidant.
