Locust bean gum (LBG, carob gum, carob bean gum, carobin, E410) is a galactomannan vegetable gum extracted from the seeds of the carob tree (Ceratonia siliqua) and used as a thickening agent (gelling agent) in food technology
Application:
The main application of locust bean gum in the food industry is its ability to bind water in large quantities, and it is used in dairy products and frozen desserts. It is usually compounded with other thickeners as thickeners, water-holding agents, adhesives, emulsifiers, gelling agents, etc.
Used with starch in sauces and seasoning liquids for tortilla chips to improve their texture. Used for cheese as flavoring agent, extruded food as water-holding agent, etc. According to my country's "Hygienic Standards for the Use of Food Additives", the amount of locust bean gum used in jelly, jam, ice cream, etc. is 5.0g/kg.
