What is Red Amaranth?
Amaranth red is purplish red powder, odorless, light-resistant and heat-resistant (105ºC), soluble in water, and 0.01% aqueous solution is rose red, insoluble in other organic solvents such as oil. The maximum absorption wavelength is 520nm±2nm. It has poor bacterial resistance, good acid resistance, stable to citric acid and tartaric acid, and turns dark red when it meets alkali.
