What is Sodium Erythorbate?
Sodium D- isoascorbate is white to yellowish white crystal or crystal powder, odorless and slightly salty. It is quite stable in air in dry state, but it is easy to oxidize in aqueous solution when it meets air, metal, heat and light. Soluble in water, the solubility is 55 g/100 mL, and the pH of 1% aqueous solution is 7.4, which is almost insoluble in ethanol. The antioxidant activity of sodium isoascorbate is the same as that of isoascorbic acid.
Functions of Sodium Erythorbate:
Sodium isoascorbate is a new type of antioxidant, antiseptic and fresh-keeping auxiliary color agent for biological food. It can prevent the formation of carcinogens in pickled products and eradicate the bad phenomena such as discoloration, odor and turbidity of food and beverage. Widely used in meat, fish, vegetables, fruits, alcohol, beverages and canned food for preservation and color matching. Rice is mainly used as the main raw material, and the product is obtained by microbial fermentation. Anti-oxidation performance: The anti-oxidation ability of sodium alloxan far exceeds that of sodium vitamin C, and there is no fortified vitamin, but it will not hinder the absorption and utilization of sodium ascorbate by human body. Sodium erythorbate ingested by human body can be converted into vitamin C in human body.
