Chondroitin sulfate (CS) is a class of glycosaminoglycans covalently attached to proteins to form proteoglycans. Chondroitin sulfate is widely distributed in the extracellular matrix and cell surface of animal tissues. The sugar chain is formed by the polymerization of alternating glucuronic acid and n-acetylgalactosamine, and is connected to the serine residue of core protein through a sugar like link region.
Although the main chain structure of polysaccharide is not complicated, it shows a high degree of heterogeneity in the degree of sulfation, the sulfate group and the distribution of the two differences to the isobaronic acid in the chain. The fine structure of chondroitin sulfate determines the functional specificity and the interaction with various protein molecules.
Chondroitin sulfate exists widely in human and animal cartilage tissue and can be extracted from animal connective tissue.
In Europe, the United States, Japan and other countries, CS is mainly used as health food or medicine for the prevention and treatment of cardiovascular and cerebrovascular diseases, osteoarthritis, neuroprotection and so on. CS has anti-inflammatory, immune regulation, cardiovascular and cerebrovascular protection, neuroprotection, antioxidant, cell adhesion regulation, anti-tumor and other pharmacological activities, and has little side effects after long-term administration. As an important biochemical drug, CS has potential application and development prospects in the fields of anti-parasitic and viral infection, tissue repair, anti-tumor and as a drug carrier.
