Sodium benzoate, also known as sodium benzoate, is a food preservative commonly used in China's food industry at present, odorless or microstrip benzoin smell, with sweet astringent taste. Stable in the air, exposed to the air can absorb moisture. Naturally occurring in blueberries, apples, plums, cranberries, cranberries, prunes, cinnamon and cloves, its bactericidal properties are weaker than benzoic acid, 1.180g sodium benzoate bactericidal power is about 1g benzoic acid. In the acidic environment, sodium benzoate has a significant inhibitory effect on a variety of microorganisms, when the pH is 3.5, the 0.05% solution can completely inhibit the growth of yeast, but when the PH is above 5.5, the effect on many molds and yeast is poor. Almost useless in alkaline solutions. After sodium benzoate enters the human body, in the process of biological transformation, it is combined with glycine to become uric acid, or with glucuronic acid to form glucuronic acid, and all are discharged from the urine, not accumulated in the body. In the normal dosage range, it has no toxic effect on human body and is a safe preservative. It can be used in carbonated beverages, concentrated fruit juice, margarine, gum base, jam, jelly, soy sauce, etc. The allowable daily intake (ADI) for humans is <5 mg/kg body weight (in benzoic acid).
