pectin is a kind of natural high molecular compound, which is mainly found in all higher plants and is an important component of plant interstitium. Pectin is deposited in the primary cell wall and intercellular layer. In the primary wall, pectin cross-links with microfibularis with different contents of cellulose, hemicellulose, lignin and some extensin, making various cell tissues hard and showing inherent morphology, and serving as the supporting material of internal cells. It was first separated and described by Henri Bracono in 1825.
Pectin is an acidic polysaccharide substance in plants, it is usually white to light yellow powder, slightly sour taste, water soluble.
