Proteolytic enzyme preparations. Mainly used in gelatin production, can greatly shorten the extraction time. It is also used for the hydrolysis of plant protein, animal protein and fish protein.
The main component is Subtilisin carlsberg, a serine protease. It is soluble in water and has a relative density of about 1.06. The optimum temperature is 50 ~ 60ºC, pH8.5(6 ~ 10).
It was prepared by deep fermentation of Baeillus licheni formis.
