L-carnosine(β-alanyl-L-histidine)
is a dipeptide of the amino acids B-alanine and histidine. lt is highlyconcentrated in muscle and brain tissue. Carnosine has a variety ofpotentially beneficial antioxidant properties, which can remove reactiveoxygen species and a-ß unsaturated aldehydes formed by fatty acidperoxidation of cell membranes during oxidative stress. Carnosine is also azwitterion, a neutral molecule with positive and negative ends.
Function:
