Caryophyllene or (−)-β-caryophyllene, is a natural bicyclic sesquiterpene that is a constituent of many essential oils, especially clove oil, the oil from the stems and flowers of Syzygium aromaticum (cloves), the essential oil of sativa, rosemary, and hops. It is usually found as a mixture with isocaryophyllene (the cis double bond isomer) and α-humulene (obsolete name: α-caryophyllene), a ring-opened isomer.
Function & Application
1. Blending clove, pepper, nutmeg, citrus, herbs, and other food flavors. The recommended dosage is about 2~200mg/kg in the final flavored food.
2. It can also be used to synthesize other fragrances, such as for the synthesis of more valuable spices such as acetyl caryophyllene.
