Direct coloring in food processing is not much, mainly used with natural yellow pigments such as gardenia yellow pigments, safflower yellow pigments and so on, the preparation of different colors of green pigments, compared with the extracted chlorophyll, the green pigments prepared with gardenia blue pigments can be controlled, good acid resistance, can be used in acidic foods and beverages. In addition, gardenia blue pigment can also be combined with a variety of natural red pigments to deploy different shades of purple.
