Hesperidin is a flavonoid substance with a dihydroflavonoside structure and is weakly acidic.
It is the main component of vitamin P.
Hydrogenated hesperidin is the natural sweetener dihydrochalazone, which is 1000 times sweeter than sucrose and can be used as a functional food.
Hesperidin has a variety of biological properties. Modern studies have found that hesperidin can be antioxidant, anti-cancer, anti-mildew, anti-allergy, lower blood pressure, inhibit oral cancer and esophageal cancer, maintain osmotic pressure, enhance capillary toughness, reduce cholesterol and so on.
Studies have shown that hesperidin has a broad spectrum of bacteriostatic effects on common contaminated bacteria in food, and has significant inhibitory effects on Bacillus subtilis, Salmonella typhimurium, Shigella fri, Streptococcus hemolyticus and Vibrio cholerae, so it is widely used in food additives and food processing.
