Lactose is a disaccharide that occurs naturally in mammalian milk.
It is secreted by the mammary glands of mammals and is found only in animals. Molecular formula C12H22O11. It is a disaccharide composed of glucose and galactose, that is, by the hydroxy group on the fourth carbon atom of glucose and the β-hemiacetal hydroxyl group of the first carbon atom of galactose. Therefore, the reducibility of aldehyde groups on glucose molecules is still maintained.
Lactose is commonly used in baby food, and is also widely used in the food industry in beverages, western sausages, sauces, instant foods, spices and meat products to supplement the low sweetness, enhance the aroma, extend the sale period and increase the value of the product. It can also be made into other derivatives (such as heterotropic emulsified sugar) for processing different foods, and is also commonly used as a tablet for tablets.
