Maltodextrin is a kind of polysaccharide with nutritional value. It is made from various kinds of starch by enzymatic process with low degree control of hydrolysis, transformation and drying. Its raw materials are starch containing corn, rice, etc., can also be refined starch, such as corn starch, wheat starch, cassava starch and so on. At present, the maltodextrin series products produced all over China are produced by enzymatic process with corn, rice and other direct raw materials. Its DE value (DextroseEquivalent, reducing sugar equivalent) was less than 20.
Maltodextrin is a white powder, easy to dissolve in water, moderate viscosity, thickening, adhesive, inhibit sugar crystallization and stable foam effect is good, has excellent emulsification performance, but also promote product molding and adjust the product structure, its low moisture absorption, not easy to caking, molding is good, can prevent product deformation and improve the appearance.
