Product use
Alitame is sweet and refreshing, heat resistant, acid and alkali resistant, with superior storage and processing stability, can be widely used in food industry. Mainly used in food, beverage, bread, candy, concentration range 20200ppm.
Alitame is a second generation peptide sweetener designed and prepared artificially, which is mainly developed for the disadvantage of poor thermal stability of aspartame. According to the law of the relationship between the structure of the peptide and the sweetness, the necessary part of the sweet group is maintained: L aspartic acid. By replacing L-phenylalanine with D-alanine and replacing methyl ester with isopropyl ester, a new sweetening agent Tian-malondipeptide was prepared, that is, L aspartyl-d-alanine isopropyl ester, which overcame the shortcomings of Tian-phenyldipeptide by heating itself, and not only had better stability, but also improved the sweetness, reaching 2000 times of sucrose, so that the application of dipeptide sweetener was more extensive.
The conventional peptide synthesis method is generally used to prepare Tian-malondipeptide derivatives, that is, double protective groups are used to protect the amino group and β carboxyl group of L-aspartate, and then peptide bond with D-alanine, and then remove the protective group. This method has many steps and high cost of protective groups. Xu Xinyang et al. adopted a new method to obtain the product by one step reaction of L-aspartate active substance and D-alanine isopropyl ester, with a yield of 8085, without the conventional steps of peptide synthesis protection and deprotection. The process is simple, the cost is low, suitable for industrial production. But its sweetness is insufficient and needs to be improved.
As a strong sweetener, it is generally considered to be non-toxic and non-irritating substances, and the WHO stipulates that the daily allowable intake of alose can reach 0.1mg/kg
