The solubility of natamycin is very low in water and in most organic solvents. Only 50mg natamycin can be dissolved in pure water at room temperature. The low solubility makes it very suitable for use on the surface of food. Natamycin is used in the food industry as a preservative. Natamycin can greatly extend the shelf-life of cheese, baked food, meat and beverage products.   
  
Function:

 1.Natamycin  is a natural, broad-spectrum, efficient and safe yeast and fungi and other filamentous fungal inhibitors, it can not only inhibit the fungus, but also to prevent the production of mycotoxins.
2.Natamycin has a good anti-mildew effect on the moon ,baked goods,meat products,salad drinks and other fields.
3. It can be used as eye drops and oral agents.

Application:

 
 Natamycin can effectively inhibit the growth and reproduction of various molds and yeasts, but no inhibitory effect on bacteria. It is commonly used to kill yeast and mold on the surface of the natural fermentation products, such as yogurt, cheese, ham, and dry sausage and therefore extend the shelf life.
It is used as an antifungal infection of eyes in pharmaceuticals.
