Malic acid, also known as 2-hydroxy-succinic acid, exists as two stereoisomers due to the presence of an asymmetric carbon atom in the molecule: D-malic acid and L-malic acid. These two isomers, as well as their mixture DL-malic acid, occur in nature in three forms. Malic acid is a white crystalline or crystalline powder with strong hygroscopic properties, soluble in water and ethanol, and has a special pleasant sour taste. It is widely used in the food and pharmaceutical industries.
Food industry: malic acid is commonly used as a food additive to provide acid taste for food, but also has antibacterial and anticorrosive effects. Malic acid plays an important role in the manufacture of beverages, dew wine, fruit juice, candy, jam, etc. In addition, it can also be used for pH regulation of sour milk fermentation and removal of tartrate in wine making.
Pharmaceutical industry: L-malic acid is a form that can be used by organisms, and is often used in complex amino acid injections to improve the availability of amino acids, especially in patients with postoperative weakness and liver dysfunction. Potassium L-malate is a good potassium supplement, can maintain the body's water balance, treat edema, high blood pressure and fat accumulation.
