Stevia is a natural sweetener, also known as stevioside, extracted from the leaves of stevia, a plant in the chrysanthemum family. It has the characteristics of high sweetness and low thermal energy, its sweetness is 200-300 times that of sucrose, and the calorific value is only 1/300 of sucrose. It is a white or slightly yellow powder that is easily soluble in water and has a safe description for use (S22; S24/25). The sweet components of stevioside mainly include stevioside and rebaudioside (abbreviated as Reb A), diterpenoid glycosides extracted from the plant native to Paraguay and Brazil. This natural non-nutritional non-sugar sweetener has been used as a substitute and flavor enhancer for natural sugars around the world, especially in Japan for more than 40 years, and is now increasingly used in the food and beverage industry in Asia and North and South America.
