Gum arabic, also known as gum arabic, is derived from the exudate of the trunk of the genus Acacia in the leguminous family, so it is also called gum acacia. The main components of gum arabic are macromolecular polysaccharides and their calcium, magnesium and potassium salts. It mainly includes aldose, galactose, glucuronic acid and so on. Good-quality gum arabic is amber in color, with large and round particles, and is mainly produced in Africa.
Function:
1. Food industry
Gum arabic used to be the most widely used and used hydrosol in the food industry, and the world's annual demand is still maintained at about 40,000 to 50,000 tons.
Gum Arabic can also be widely used in beverage production. For example, it can stabilize the flavor and essential oils in the production of soft drink concentrates. It is also used in candy manufacturing, like traditional hard (wine) gummy and soft candies, and can also be used as a foam stabilizer for marshmallows.
2. Printing industry
The printing layout is mainly rubbed gum arabic.
Application:
Acacia gum has good emulsifying properties, especially suitable for oil-in-water emulsion system, widely used as emulsion stabilizer in emulsion essence;It also has good film-forming properties; as a microcapsule film-forming agent for converting essential oils or other liquid raw materials into powder form, it can prolong flavor quality and prevent oxidation, and is also used as a flavor carrier for baked products.
gum arabic can hinder the formation of sugar crystals, used as anti-crystallization agent in candy, prevent crystal precipitation, can also effectively emulsified milk fat in milk sugar to avoid spillage;
gum arabic is also used to glaze on the surface of chocolate, so that chocolate is only soluble in the mouth, insoluble in hands;
Acacia gum is used in emulsified beverages such as cola to emulsify and disperse essential oils and oil-soluble pigments to avoid the pigmentation of bottlenecks where essential oils and pigments float during storage;
Acacia gum is also used as a haze agent for beverages with vegetable oils and resins to increase the diversity of the appearance of the beverage.
