ε-polylysine is a light yellow powder with strong hygroscopicity and slightly bitter taste. It is a straight chain polymer of lysine. It is produced by the fermentation of Streptomyces and has a broad spectrum antibacterial effect.
ε-polylysine is polymerized by 25-30 lysine groups, which is stable to ph and heat, and its antibacterial effect is related to the degree of polymerization and the environment, and the molecular weight is between 3600-4300 and has the best antibacterial activity.
ε-polylysine is a straight chain polymer of lysine, which is produced by the fermentation of Streptomyces and has a broad spectrum antibacterial effect. In addition, ε-polylysine is also a natural preservative, which has obvious antibacterial and killing effect on gram-negative bacteria such as Escherichia coli and Bacillus productans.
