Lactic acid is an important organic acid, the production and consumption of the second organic acid after citric acid, some data show that the consumption of lactic acid accounted for about 15% of the total consumption of organic acids. In recent years, due to the expanded application of L-lactic acid in biodegradable plastics, its demand will have a larger rate of growth, some people predict that it is possible to catch up with or exceed citric acid in a few years. Lactic acid exists widely in nature and is found in living organisms.
Lactic acid, also known as 2-hydroxy-propionic acid, α-hydroxy-propionic acid, has an asymmetric carbon atom in its molecular structure, forming two optical isomers D-body, L-body and racemic DL-body, a total of three optical isomers. In 1780 Scheele obtained this product in sour milk, hence the name lactic acid.
Dextrorotals and racemes exist in human and animal meat tissues, while leftrals are normal metabolites in mammals.
Under slow oxidation conditions, this product can produce pyruvate, when heated to 250ºC or more, it breaks down the chain, generates acetaldehyde, and releases carbon dioxide and water. Reacting with ammonia or amines, lactamide can be formed.
