Xanthan gum is a high molecular polysaccharide material which is polymerized from 5 molecular sugars as one unit. Each unit consists of 2 molecules of glucose, 2 molecules of mannose and 1 molecule of glucuronic acid. The main chain consists of 2 molecules of glucose, which is connected by 1, 4-glucoside bond with β-glucose, and its structure is the same as that of cellulose. 2 molecules of mannose and 1 molecule of glucuronic acid are interspersed on C3 of glucose to form side chains. There are pyruvate and carboxylic acid side groups on the side chain. Because its side chain contains acidic groups, it is a polyanion in aqueous solution, forming the tertiary three-dimensional structure of xanthan gum: the side chain with anions is wrapped around the main chain to form a helix structure, and the molecular double helix is formed by hydrogen bonds, and the double helix structure is maintained by weak non-covalent bonds, forming a regular "super bonded ribbon spiral polymer". Its unique properties are related to the pyruvate contained in it, and usually the level of pyruvate content in xanthan gum can be used to measure its performance.
