Anhydrous citric acid is an important organic acid with a molecular weight of 192.12 g/mol. It is a colorless crystal, odorless, has a strong sour taste, and is easily soluble in water. In biochemistry, anhydrous citric acid is an intermediate in the citric acid cycle (tricarboxylic acid cycle), which occurs in the metabolism of all aerobic organisms.
Anhydrous citric acid is widely used as an acidity regulator, flavoring agent and chelating agent, and is particularly widely used in the food industry, which can account for more than 75%. It can not only be used as an acid and antioxidant for food, but also for making jams, fruits, pastries and so on. In addition, anhydrous citric acid also occupies a certain proportion in the pharmaceutical industry and can be used for anticoagulation.
